Ingredients

  • 2 bay leaves
  • 1 bell pepper
  • 0.5 teaspoon cayenne pepper
  • 2 stalks celery
  • 950 milliliters chicken broth
  • 3 cloves garlic
  • 300 grams long-grain white rice
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon paprika
  • 450 grams red beans
  • 450 grams smoked sausage
  • 1 teaspoon thyme

Directions

Step 1
Set the Instant Pot to sauté mode and add olive oil.
Step 2
Add sliced smoked sausage and cook until browned, about 5 minutes.
Step 3
Add chopped onion, bell pepper, celery, and garlic. Sauté until vegetables are softened, about 5 minutes.
Step 4
Add soaked red beans, chicken broth, bay leaves, thyme, paprika, and cayenne pepper.
Step 5
Stir well and secure the Instant Pot lid. Set to manual high pressure for 35 minutes.
Step 6
Once the cooking time is complete, allow the pressure to release naturally for 20 minutes, then quick release any remaining pressure.
Step 7
Remove the bay leaves and stir in the rice. Set the Instant Pot to sauté mode and cook until rice is tender, about 15 minutes, stirring occasionally.
