Ingredients

  • 2 bay leaves
  • 500 ml beef broth
  • 2 g black pepper
  • 200 g carrots
  • 3 garlic cloves
  • 1000 g lamb shoulder
  • 30 ml olive oil
  • 1 onion
  • 5 g oregano
  • 10 g parsley
  • 500 g potatoes
  • 250 ml red wine
  • 5 g salt
  • 5 g thyme
  • 400 g tomatoes

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
Step 3
In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
Step 4
Return the lamb to the pot and add the chopped tomatoes, red wine, beef broth, bay leaves, oregano, thyme, salt, and black pepper. Stir well to combine.
Step 5
Bring the mixture to a boil, then reduce the heat to low and simmer for about 1.5 hours, or until the lamb is tender.
Step 6
Add the cubed potatoes and sliced carrots to the pot. Continue to simmer for another 30 minutes, or until the vegetables are tender.
Step 7
Remove the bay leaves before serving.
Step 8
Garnish with freshly chopped parsley and serve hot.
