Step 1
Wash the plums and remove the pits.

Cut the plums into small pieces.

In a large pot, combine the plums and water. Bring to a boil, then reduce the heat and simmer for 30 minutes.

Strain the cooked plums through a jelly bag or cheesecloth, reserving the juice.

Measure 4 cups of the plum juice and return it to the pot.

Add the sugar and lemon juice to the pot, stirring to dissolve the sugar.

Bring the mixture to a boil over high heat, stirring constantly.

Add the pectin and continue to boil for 1-2 minutes, or until the jelly reaches the desired consistency.

Remove from heat and skim off any foam.

Pour the hot jelly into sterilized jars, leaving ¼ inch of headspace. Wipe the rims, apply the lids, and process in a boiling water bath for 10 minutes.
