  • 475 ml heavy cream
  • 1.5 tbsp lemon juice

Directions

Step 1
Pour the heavy cream into a medium saucepan and heat over medium heat until it reaches 190°F (88°C), stirring occasionally to prevent scorching.

Once the cream reaches the desired temperature, add the lemon juice and continue to heat, stirring gently for about 5 minutes, until the cream thickens.
Step 3
Remove from heat and let the mixture cool to room temperature.
Step 4
Pour the mixture into a fine mesh strainer lined with cheesecloth and set over a bowl. Cover and refrigerate for at least 8 hours or overnight to allow the whey to drain.
Step 5
After draining, transfer the thickened cream to an airtight container and store in the refrigerator. Use as a substitute for mascarpone cheese in your recipes.
