  • 480 g broccoli
  • 60 g butter
  • 240 g cheddar cheese
  • 720 ml chicken broth
  • 2 cloves garlic
  • 240 ml heavy cream
  • 0.5 tsp pepper
  • 1 tsp salt

Directions

Step 1
Melt butter in a large pot over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Step 2
Add broccoli florets and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.

Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.

Stir in the heavy cream and shredded cheddar cheese. Cook over low heat until the cheese is melted and the soup is heated through, about 5 minutes. Season with salt and pepper to taste.
