Ingredients

  • 2.5 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon cinnamon
  • 2.5 tablespoons cornstarch
  • 3 eggs
  • 4 cups milk
  • 1 pie crust
  • 1 cup sugar
  • 1 teaspoon vanilla extract

Directions

Step 1
Preheat the oven to 350°F (175°C).
Step 2
In a medium saucepan, heat the milk until it's just about to boil.
Step 3
In a large bowl, whisk together the sugar, eggs, flour, and cornstarch until smooth.
Step 4
Slowly pour the hot milk into the egg mixture, whisking constantly.
Step 5
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens.
Step 6
Remove from heat and stir in the vanilla extract and butter until well combined.
Step 7
Pour the custard into the pre-baked pie crust.
Step 8
Sprinkle the top with ground cinnamon.
Step 9
Bake in the preheated oven for 25-30 minutes, or until the filling is set and the top is lightly browned.
Step 10
Allow to cool to room temperature, then refrigerate before serving.
