Ingredients

  • 1 bay leaf
  • 1 tsp black pepper
  • 2 carrots
  • 2 celery stalks
  • 1000 ml chicken broth
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 3 potatoes
  • 500 g pulled pork
  • 1 tsp salt
  • 1 tsp thyme
  • 60 g tomato paste

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add chopped onion, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
Step 3
Add minced garlic and cook for another minute.
Step 4
Stir in tomato paste and cook for 2 minutes.
Step 5
Add the pulled pork, diced potatoes, chicken broth, salt, pepper, thyme, and bay leaf.
Step 6
Bring to a boil, then reduce heat and let it simmer for 30 minutes or until the potatoes are tender.
Step 7
Remove the bay leaf and adjust seasoning if needed.
