Step 1
Place 6 large eggs in a saucepan and cover with water. Bring to a boil, then simmer for 6 minutes. Transfer the eggs to a bowl of ice water to cool. Once cooled, carefully peel the eggs.

In a bowl, mix the sausage meat with salt and black pepper until well combined.

Divide the sausage meat into 6 equal portions. Flatten each portion into a patty and wrap it around each peeled egg, ensuring the egg is completely covered.

Prepare three separate bowls: one with flour, one with a beaten egg, and one with breadcrumbs.

Roll each sausage-wrapped egg in flour, dip in the beaten egg, and then coat with breadcrumbs. Ensure each egg is fully covered with breadcrumbs.
Step 6
Heat vegetable oil in a deep fryer or large saucepan to 170°C (340°F). Carefully lower the Scotch eggs into the hot oil and fry for 6-8 minutes, or until golden brown and crispy.
Step 7
Remove the Scotch eggs from the oil and drain on paper towels. Serve warm or cold.
