Ingredients

  • 0.5 tsp black pepper
  • 3 carrots
  • 200 g collard greens
  • 3 garlic cloves
  • 1 tbsp ginger
  • 2 tbsp olive oil
  • 1 onion
  • 200 g peanut butter
  • 1 red bell pepper
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 2 sweet potatoes
  • 400 g tomatoes
  • 1 liter vegetable broth

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the diced onion and cook until softened, about 5 minutes.
Step 3
Stir in the minced garlic and grated ginger, cooking for another 2 minutes.
Step 4
Add the sweet potatoes, carrots, and red bell pepper to the pot and cook for 5 minutes, stirring occasionally.

Pour in the canned tomatoes and vegetable broth, bringing the mixture to a boil.
Step 6
Reduce the heat and let the stew simmer for 20 minutes, or until the vegetables are tender.
Step 7
Stir in the peanut butter until fully incorporated.
Step 8
Add the chopped collard greens, salt, black pepper, and red pepper flakes, and cook for another 5 minutes.
Step 9
Serve hot, garnished with additional chopped peanuts or cilantro if desired.
