  • 1 tsp black pepper
  • 4 carrots
  • 1.5 kg cross rib roast
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 4 potatoes
  • 1 tbsp rosemary
  • 1 tsp salt
  • 1 tbsp thyme

Directions

Step 1
Preheat the oven to 180°C (350°F).

Rub the cross rib roast with olive oil, minced garlic, rosemary, thyme, salt, and black pepper.

In a large roasting pan, place the roast and surround it with chopped carrots, potatoes, and onion.

Pour the beef broth into the pan to keep the meat moist during cooking.
