Ingredients

  • 0.5 tsp black pepper
  • 200 g cherry tomatoes
  • 100 g cucumber
  • 100 g feta cheese
  • 1 clove garlic
  • 60 g kalamata olives
  • 30 ml lemon juice
  • 60 ml olive oil
  • 30 g parsley
  • 180 g quinoa
  • 50 g red onion
  • 1 tsp salt
  • 480 ml water

Directions

Step 1
Rinse the quinoa under cold water.
Step 2
In a medium pot, bring the quinoa and water to a boil.
Step 3
Reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed.
Step 4
Remove the cooked quinoa from the heat and let it cool.
Step 5
In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, and parsley.
Step 6
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.
Step 7
Pour the dressing over the quinoa mixture and toss to coat evenly.
Step 8
Serve immediately or refrigerate for later use.
