  • 2 bay leaves
  • 1000 ml beef broth
  • 900 g beef stew meat
  • 0.5 tsp black pepper
  • 2 carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 30 ml olive oil
  • 1 onions
  • 450 g potatoes
  • 1 tsp salt
  • 1 tsp thyme
  • 60 g tomato paste

Directions

Step 1
Heat the olive oil in a Dutch oven over medium-high heat.
Step 2
Add the beef stew meat and cook until browned on all sides, about 5-7 minutes.
Step 3
Remove the beef from the Dutch oven and set aside.
Step 4
In the same Dutch oven, add the onions, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

Stir in the tomato paste and cook for an additional 1-2 minutes.

Return the beef to the Dutch oven and add the beef broth, potatoes, bay leaves, thyme, salt, and pepper.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
Step 8
Remove the bay leaves before serving.
