  • 1 tsp baking soda
  • 250 ml boiling water
  • 200 g brown sugar
  • 115 g butter
  • 250 g dates
  • 2 eggs
  • 300 g self-raising flour
  • 1 tsp vanilla extract
  • 100 g walnuts

Directions

Step 1
Preheat your oven to 180°C (350°F) and grease a loaf tin.
Step 2
Place the chopped dates in a bowl, pour over the boiling water, and stir in the baking soda. Let it sit for 10 minutes.
Step 3
In a separate bowl, cream together the butter and brown sugar until light and fluffy.
Step 4
Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
Step 5
Gradually add the self-raising flour to the butter mixture, mixing until just combined.
Step 6
Fold in the date mixture and chopped walnuts until evenly distributed.
Step 7
Pour the batter into the prepared loaf tin and smooth the top.
Step 8
Bake in the preheated oven for 60-70 minutes, or until a skewer inserted into the center comes out clean.
Step 9
Allow the loaf to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
