  • 57 g butter
  • 473 ml chicken broth
  • 454 g crab meat
  • 30 g flour
  • 473 ml half-and-half
  • 473 ml milk
  • 5 g old bay seasoning
  • 5 g salt
  • 15 ml sherry

Directions

Step 1
Melt the butter in a large saucepan over medium heat.
Step 2
Whisk in the flour and cook, stirring constantly, for about 2 minutes until the mixture is bubbly but not browned.
Step 3
Gradually whisk in the milk, half-and-half, and chicken broth. Continue to cook, stirring constantly, until the mixture thickens and comes to a gentle boil.
Step 4
Reduce the heat to low and stir in the crab meat, Old Bay seasoning, salt, and black pepper.
Step 5
Simmer gently for about 10 minutes, stirring occasionally, until the crab meat is heated through.
Step 6
If using, stir in the sherry and cook for an additional 2 minutes.
Step 7
Serve hot, garnished with a sprinkle of Old Bay seasoning or fresh herbs if desired.
