This boiled fruitcake is dense, moist, and filled with a variety of dried fruits and spices. It's perfect for holiday celebrations or any special occasion.

Step 1
Combine the mixed dried fruit, water, brown sugar, and butter in a large saucepan.

Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes. Remove from heat and let it cool.

Preheat your oven to 150°C (300°F).

Add baking soda to the cooled fruit mixture and stir well.

Sift in the flour and mixed spice, then stir until well combined.

Beat the eggs and add them to the mixture, stirring until fully incorporated.

Pour the batter into a greased and lined 20cm (8-inch) cake tin.

Bake in the preheated oven for 1.5 to 2 hours, or until a skewer inserted into the center comes out clean.
