Ingredients

  • 1 bay leaf
  • 1 bell pepper
  • 0.5 teaspoon black pepper
  • 4 cups fish stock
  • 0.5 cup fresh cilantro
  • 4 garlic cloves
  • 500 grams mussels
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 500 grams shrimp
  • 4 tomato
  • 500 grams white fish fillets
  • 1 cup white wine

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are tender, about 5 minutes.
Step 3
Add the chopped tomatoes and cook for another 5 minutes, until the tomatoes start to break down.
Step 4
Pour in the fish stock and white wine. Add the bay leaf, paprika, salt, and black pepper. Bring to a boil.
Step 5
Reduce the heat and let the soup simmer for 15 minutes to allow the flavors to meld together.
Step 6
Add the shrimp, mussels, and white fish fillets to the pot. Cook for about 5-7 minutes, or until the seafood is cooked through and the mussels have opened.
Step 7
Remove the bay leaf. Stir in the chopped fresh cilantro.
Step 8
Serve the soup hot, garnished with additional cilantro if desired.
