Ingredients

  • 3 cups cooked rice
  • 2 eggs
  • 1 cup frozen peas and carrots
  • 2 green onion
  • 1 cup ham
  • 0.5 tsp salt
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil

Directions

Step 1
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
Step 2
Add the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.
Step 3
Add the remaining vegetable oil to the pan and heat. Add the diced ham and cook for 2-3 minutes until lightly browned.
Step 4
Stir in the frozen peas and carrots and cook for another 2 minutes until heated through.
Step 5
Add the cooked rice to the pan and stir to combine with the ham and vegetables.
Step 6
Pour in the soy sauce and sesame oil, stirring well to coat the rice evenly.
Step 7
Add the scrambled eggs back to the pan, breaking them up into small pieces as you mix them into the rice.
Step 8
Season with salt and add the chopped green onions. Stir to combine, then serve hot.
