  • 250 g all-purpose flour
  • 4 g baking soda
  • 120 g chopped nuts
  • 5 g cinnamon
  • 2 eggs
  • 2 g nutmeg
  • 240 g persimmon pulp
  • 2 g salt
  • 200 g sugar
  • 5 ml vanilla extract
  • 120 ml vegetable oil

Directions

Step 1
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.

In a medium bowl, combine the persimmon pulp, sugar, and vegetable oil. Mix well.

Add the eggs one at a time, beating well after each addition.
Step 4
In another bowl, sift together the flour, baking soda, cinnamon, nutmeg, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Stir in the vanilla extract and chopped nuts (if using).

Pour the batter into the prepared loaf pan and smooth the top.
