Step 1
Heat the olive oil in a large pot over medium heat.

Add the pork shoulder chunks and cook until browned on all sides.

Remove the pork and set it aside.

In the same pot, add the chopped onion and cook until softened.

Add the minced garlic and cook for another minute.

Add the tomatillos, green chiles, cilantro, chicken broth, cumin, oregano, salt, and pepper to the pot.

Bring to a boil, then reduce the heat and simmer for 20 minutes.
