  • 225 g all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 2 eggs
  • 150 g granulated sugar
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp ground ginger
  • 180 ml honey
  • 0.5 tsp salt
  • 240 ml strong brewed coffee
  • 120 ml vegetable oil

Directions

Step 1
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan.
Step 2
In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves.

In another bowl, beat the eggs and sugar until well combined. Add the honey and vegetable oil, and mix until smooth.

Gradually add the dry ingredients to the wet ingredients, alternating with the coffee. Mix until just combined.
Step 5
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Step 6
Bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
Step 7
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
