Ingredients

  • 1 tsp celery seeds
  • 500 grams fresh corn kernels
  • 1 green bell pepper
  • 1 tbsp mustard seeds
  • 1 onion
  • 1 red bell pepper
  • 1 tsp salt
  • 100 grams sugar
  • 240 ml white vinegar

Directions

Step 1
In a large pot, combine the corn, red bell pepper, green bell pepper, and onion.
Step 2
Add the white vinegar, sugar, mustard seeds, celery seeds, and salt to the pot.
Step 3
Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer for 20 minutes, stirring occasionally.
Step 4
Remove the pot from the heat and let the mixture cool slightly.
Step 5
Transfer the corn relish to sterilized jars and seal tightly.
Step 6
Refrigerate the jars for at least 24 hours before serving to allow the flavors to meld.
