Ingredients

  • 2 bay leaves
  • 2.5 ml black pepper
  • 3 carrots
  • 3 celery stalks
  • 2.5 ml dried thyme
  • 4 garlic cloves
  • 1 onion
  • 5 ml salt
  • 1 turkey carcass
  • 3000 ml water

Directions

Step 1
Place the turkey carcass in a large stockpot and cover with 3000 ml of water.
Step 2
Add the chopped carrots, celery, onion, minced garlic, bay leaves, dried thyme, salt, and black pepper to the pot.
Step 3
Bring the mixture to a boil, then reduce the heat and let it simmer for about 2 hours.
Step 4
Occasionally skim off any foam that rises to the surface.
Step 5
After 2 hours, remove the turkey carcass and bay leaves from the pot.
Step 6
Strain the broth through a fine-mesh sieve to remove any solid pieces.
Step 7
Return the strained broth to the pot and adjust the seasoning if needed.
Step 8
Add any leftover turkey meat to the soup and cook for an additional 15 minutes.
