Ingredients

  • 50 g achiote paste
  • 5 g black pepper
  • 2 g cumin
  • 3 dried chiles
  • 2 dried chiles
  • 4 garlic cloves
  • 120 ml orange juice
  • 5 g oregano
  • 500 g pineapple
  • 1000 g pork shoulder
  • 10 g salt
  • 30 ml vegetable oil
  • 120 ml white vinegar

Directions

Step 1
Soak the dried chiles in hot water for 15 minutes until softened.
Step 2
Drain the chiles and blend them with the vinegar, orange juice, garlic, achiote paste, oregano, cumin, salt, and black pepper until smooth.
Step 3
Marinate the pork slices in the blended sauce for at least 4 hours, preferably overnight, in the refrigerator.
Step 4
Preheat a grill or skillet over medium-high heat and add the vegetable oil.
Step 5
Grill the pork slices until they are cooked through and slightly charred, about 5-7 minutes per side.
Step 6
Grill the pineapple chunks until they are caramelized, about 3-4 minutes per side.
Step 7
Chop the grilled pork and pineapple into small pieces.
Step 8
Serve the pork and pineapple on warm corn tortillas with your favorite toppings, such as chopped onions, cilantro, and salsa.
