Ingredients

  • 0.5 teaspoon black pepper
  • 500 grams carrots
  • 2 tablespoons fresh parsley
  • 2 garlic cloves
  • 100 ml heavy cream
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon salt
  • 1000 ml vegetable broth

Directions

Step 1
Peel and chop the carrots into small pieces.
Step 2
Finely chop the onion and garlic.
Step 3
In a large pot, heat the olive oil over medium heat.
Step 4
Add the chopped onion and garlic to the pot and sauté until they are soft and fragrant.

Add the chopped carrots to the pot and cook for a few more minutes, stirring occasionally.
Step 6
Pour in the vegetable broth, bring to a boil, then reduce heat and let it simmer until the carrots are tender, about 20 minutes.
Step 7
Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
Step 8
Stir in the heavy cream, salt, and black pepper. Adjust seasoning to taste.
Step 9
Serve hot, garnished with chopped fresh parsley.
