Quick Pasta with Salmon and Creamy Tomatoes

A delicious and quick pasta dish featuring tender salmon and juicy tomatoes in a creamy sauce. Perfect for a weeknight dinner.

Ingredients

  • 0.5 tsp black pepper
  • 200 g cherry tomatoes
  • 150 ml cream
  • 5 g fresh basil
  • 1 garlic clove
  • 2 tbsp olive oil
  • 50 g parmesan cheese
  • 250 g pasta
  • 200 g salmon fillet
  • 1 tsp salt

Directions

Step 1
Cook the pasta according to the package instructions until al dente. Drain and set aside.
Step 2
Heat the olive oil in a large pan over medium heat.
Step 3
Add the minced garlic and sauté for 1-2 minutes until fragrant.
Step 4
Add the salmon fillet to the pan and cook for 3-4 minutes on each side, until cooked through. Remove from the pan and flake into pieces.
Step 5
In the same pan, add the cherry tomatoes and cook for 3-4 minutes until they begin to soften.
Step 6
Pour in the cream and stir to combine. Allow to simmer for 2-3 minutes.
Step 7
Return the salmon to the pan and mix with the creamy tomato sauce.
Step 8
Add the cooked pasta to the sauce and toss to coat evenly.
Step 9
Season with salt and black pepper to taste.
Step 10
Serve the pasta topped with grated parmesan cheese and fresh basil leaves.
