Ingredients

  • 0.5 tsp black pepper
  • 500 g broccoli
  • 2 cloves garlic
  • 200 ml heavy cream
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 1000 ml vegetable broth

Directions

Step 1
In a large pot, heat the olive oil over medium heat.
Step 2
Add the diced onion and minced garlic, and sauté until softened, about 5 minutes.
Step 3
Add the chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 15 minutes.
Step 4
Use an immersion blender to puree the soup until smooth. Alternatively, let the soup cool slightly and blend in batches in a regular blender.
Step 5
Stir in the heavy cream, salt, and black pepper. Heat through, but do not boil.
Step 6
Serve hot, garnished with extra black pepper or a drizzle of olive oil if desired.
