Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 2 carrot
  • 2 stalks celery
  • 400 ml coconut milk
  • 3 cloves garlic
  • 3 tbsp nutritional yeast
  • 2 tbsp olive oil
  • 1 onion
  • 900 grams potato
  • 1 tsp salt
  • 1 tsp thyme
  • 1200 ml vegetable broth

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the diced onion and minced garlic, and sauté until translucent, about 5 minutes.
Step 3
Add the diced carrots and celery, and cook for another 5 minutes.
Step 4
Stir in the diced potatoes, vegetable broth, coconut milk, salt, black pepper, thyme, and bay leaf.

Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 20 minutes.
Step 6
Remove the bay leaf and use an immersion blender to blend the soup until smooth and creamy.
Step 7
Stir in the nutritional yeast and adjust seasoning if needed.
