Hoe cakes are a traditional Southern dish, resembling pancakes made with cornmeal. They are crispy on the outside and soft on the inside, perfect for breakfast or as a side dish.

Ingredients

  • 10 grams baking powder
  • 60 grams butter
  • 240 grams cornmeal
  • 1 egg
  • 120 grams flour
  • 480 ml milk
  • 5 grams salt
  • 15 grams sugar
  • 30 ml vegetable oil

Directions

Step 1
In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt.

In a separate bowl, whisk together milk, egg, and melted butter.
Step 3
Pour the wet ingredients into the dry ingredients and stir until just combined.
Step 4
Heat a large skillet over medium heat and add vegetable oil.
Step 5
Spoon batter onto the skillet to form cakes, about 1/4 cup of batter per cake.
Step 6
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Step 7
Flip the cakes and cook until golden brown on the other side, another 2-3 minutes.
Step 8
Repeat with remaining batter, adding more oil to the skillet as needed.
Step 9
Serve hot with butter and syrup, if desired.
