  • 240 g black olives
  • 2 g black pepper
  • 60 g carrot
  • 60 g cauliflower
  • 60 g celery
  • 2 cloves garlic
  • 240 g green olives
  • 60 ml olive oil
  • 5 g oregano
  • 15 g parsley
  • 60 g red bell pepper
  • 30 ml red wine vinegar

Directions

Step 1
Chop the green and black olives roughly and place them in a large bowl.
Step 2
Add the chopped celery, carrot, cauliflower, red bell pepper, and minced garlic to the bowl.
Step 3
Stir in the chopped parsley, dried oregano, and ground black pepper.
Step 4
Pour in the olive oil and red wine vinegar, and mix well to combine all ingredients.
Step 5
Cover the bowl and refrigerate the olive salad for at least 2 hours, preferably overnight, to allow the flavors to meld.
