Step 1
Preheat your oven to 150°C (300°F). Grease a baking dish.

In a large saucepan, heat the milk over medium heat until it just begins to boil. Gradually whisk in the cornmeal.

Reduce the heat to low and cook, stirring constantly, until the mixture thickens, about 15 minutes.

Remove from heat and stir in the maple syrup, butter, sugar, molasses, salt, ginger, cinnamon, and nutmeg.

In a small bowl, beat the eggs. Gradually add a small amount of the hot cornmeal mixture to the eggs, whisking constantly to temper them.
