Ingredients

  • 250 grams all-purpose flour
  • 150 grams butter
  • 2 tablespoons cornstarch
  • 1 egg
  • 1 tablespoon lemon juice
  • 600 grams plums
  • 1 pinch salt
  • 100 grams sugar

Directions

Step 1
Preheat the oven to 180°C (350°F).
Step 2
In a large bowl, mix the flour, a pinch of salt, and 50 grams of sugar.
Step 3
Cut the butter into small pieces and add to the flour mixture. Crumble with your fingers until the mixture resembles breadcrumbs.
Step 4
Add the egg and knead until the dough forms. Wrap in plastic wrap and chill in the fridge for 30 minutes.
Step 5
Wash and pit the plums. Cut them into slices and place in a bowl.
Step 6
Add the remaining 50 grams of sugar, lemon juice, and cornstarch to the plums. Mix well.
Step 7
Roll out the dough and place it in a pie dish. Trim the edges.
Step 8
Fill the crust with the plum mixture.
Step 9
Bake for 45-50 minutes or until the crust is golden and the filling is bubbly.
Step 10
Let the pie cool before serving.
