Step 1
Preheat your oven to 190°C (375°F). Grease a madeleine mold with butter and dust with flour.

In a bowl, whisk together the flour, baking powder, and salt.

In another bowl, beat the eggs and sugar until pale and thick. Add the lemon zest and vanilla extract.

Gently fold the flour mixture into the egg mixture until just combined.

Fold in the melted butter until the batter is smooth. Do not overmix.

Spoon the batter into the prepared madeleine mold, filling each shell about three-quarters full.

Bake for 10-12 minutes or until the edges are golden brown and the centers spring back when lightly touched.
