Harira is a traditional Moroccan soup, typically prepared during the holy month of Ramadan. This rich and hearty soup is packed with a variety of spices, herbs, and legumes, making it a nutritious and fulfilling meal.
Directions
Step 1
Soak the chickpeas overnight in water. Drain and set aside.
Step 2
In a large pot, heat the olive oil over medium heat. Add the diced meat and cook until browned.

Add the chopped onion and celery, cooking until softened.

Stir in the tomatoes, tomato paste, parsley, cilantro, ginger, turmeric, cinnamon, black pepper, and salt. Cook for a few minutes until fragrant.

Add the soaked chickpeas, lentils, and water. Bring to a boil, then reduce the heat and simmer for about 1 hour or until the chickpeas are tender.

In a small bowl, mix the flour with some water to create a smooth paste. Stir this into the soup to thicken it.

Simmer for another 10-15 minutes, stirring occasionally.

Serve hot, garnished with extra chopped parsley and cilantro if desired.
