Ingredients

  • 300 g beef or lamb
  • 2 stalks celery
  • 150 g chickpeas
  • 2 tbsp flour
  • 0.5 cup fresh cilantro
  • 0.5 cup fresh parsley
  • 1 tsp ginger
  • 0.5 tsp ground black pepper
  • 0.5 tsp ground cinnamon
  • 100 g lentils
  • 2 tbsp olive oil
  • 1 onion
  • 2 tsp salt
  • 2 tbsp tomato paste
  • 400 g tomatoes
  • 1 tsp turmeric
  • 2 L water

Directions

Step 1
Soak the chickpeas overnight in water. Drain and set aside.
Step 2
In a large pot, heat the olive oil over medium heat. Add the diced meat and cook until browned.
Step 3
Add the chopped onion and celery, cooking until softened.
Step 4
Stir in the tomatoes, tomato paste, parsley, cilantro, ginger, turmeric, cinnamon, black pepper, and salt. Cook for a few minutes until fragrant.
Step 5
Add the soaked chickpeas, lentils, and water. Bring to a boil, then reduce the heat and simmer for about 1 hour or until the chickpeas are tender.
Step 6
In a small bowl, mix the flour with some water to create a smooth paste. Stir this into the soup to thicken it.
Step 7
Simmer for another 10-15 minutes, stirring occasionally.
Step 8
Serve hot, garnished with extra chopped parsley and cilantro if desired.
