  • 0.5 cup cilantro
  • 4 cups corn kernels
  • 0.5 cup cotija cheese
  • 2 cloves garlic
  • 1 jalapeño
  • 1 lime
  • 0.5 cup mayonnaise
  • 0.5 tsp salt

Directions

Step 1
In a large skillet, toast the corn kernels over medium-high heat until they are slightly charred, about 5-7 minutes.
Step 2
Transfer the toasted corn to a large mixing bowl.
Step 3
Add the mayonnaise, cotija cheese, lime juice, cilantro, chili powder, salt, jalapeño, and garlic to the bowl.
