  • 4 buns
  • 30 g butter
  • 240 ml buttermilk
  • 1 g cayenne pepper
  • 2 chicken breasts
  • 30 g cornstarch
  • 240 g flour
  • 2 g garlic powder
  • 30 ml hot sauce
  • 4 leaves lettuce
  • 60 g mayonnaise
  • 15 g mustard
  • 2 g onion powder
  • 2 g paprika
  • 8 slices pickles
  • 5 g salt
  • 500 ml vegetable oil

Directions

Step 1
Pound the chicken breasts to an even thickness using a meat mallet.
Step 2
In a bowl, mix buttermilk and hot sauce. Add chicken and marinate for at least 30 minutes.

In another bowl, combine flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.

Remove chicken from marinade, letting excess drip off, and dredge in the flour mixture, pressing to adhere.

Heat vegetable oil in a large skillet over medium-high heat until it reaches 175°C.

Fry the chicken until golden brown and cooked through, about 5-7 minutes per side. Transfer to a wire rack to drain.
Step 7
Toast the buns with butter in a separate skillet until golden brown.

Assemble the sandwiches by spreading mayonnaise and mustard on the buns, adding lettuce, pickles, and the fried chicken.
