  • 150 g bean sprouts
  • 2 tbsp brown sugar
  • 2 eggs
  • 3 tbsp fish sauce
  • 3 cloves garlic
  • 3 green onions
  • 1 lime
  • 50 g peanuts
  • 1 tsp red chili flakes
  • 200 g rice noodles
  • 400 g shrimp
  • 2 tbsp tamarind paste
  • 2 tbsp vegetable oil

Directions

Step 1
Soak the rice noodles in hot water for about 10 minutes or until they are soft. Drain and set aside.
Step 2
In a small bowl, mix the fish sauce, tamarind paste, and brown sugar. Set aside.
Step 3
Heat the vegetable oil in a large pan over medium-high heat. Add the garlic and cook until fragrant.
Step 4
Add the shrimp to the pan and cook until they turn pink and are cooked through.
Step 5
Push the shrimp to one side of the pan and add the beaten eggs. Scramble the eggs until they are fully cooked.
Step 6
Add the soaked noodles to the pan, followed by the fish sauce mixture. Toss everything together to combine.
Step 7
Add the bean sprouts, green onions, and red chili flakes. Stir-fry for another 2-3 minutes.
Step 8
Remove the pan from heat and sprinkle the chopped peanuts on top.
Step 9
Serve the Pad Thai with lime wedges on the side for squeezing over the top.
