  • 500 g all-purpose flour
  • 1 tsp black pepper
  • 250 g butter
  • 2 egg
  • 1 egg
  • 200 g mozzarella cheese
  • 100 g parmesan cheese
  • 150 g prosciutto
  • 500 g ricotta cheese
  • 150 g salami
  • 2 tsp salt
  • 60 ml water

Directions

Step 1
In a large bowl, combine the flour and salt. Add the chilled butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
Step 2
Add the eggs and cold water to the flour mixture and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the oven to 180°C (350°F).

In a large bowl, combine the ricotta cheese, mozzarella cheese, prosciutto, salami, Parmesan cheese, and black pepper. Mix well to combine.

Divide the dough into two equal portions. On a floured surface, roll out one portion of dough to fit a 9-inch pie dish. Transfer the dough to the pie dish.

Fill the pie crust with the meat and cheese mixture, spreading it evenly.

Roll out the second portion of dough and place it over the filling. Trim and crimp the edges to seal the pie.

Brush the top of the pie with the beaten egg to create a shiny finish.

Cut a few small slits in the top crust to allow steam to escape during baking.

Bake the pie in the preheated oven for 60-70 minutes, or until the crust is golden brown and the filling is bubbling.
