A classic Irish fruit bread, perfect for tea time or special occasions. This slightly sweet loaf is filled with dried fruits and spices.

Ingredients

  • 200 g brown sugar
  • 450 g dried mixed fruit
  • 1 egg
  • 2 tsp mixed spice
  • 250 g self-raising flour
  • 300 ml strong tea

Directions

Step 1
Place the dried mixed fruit in a bowl and pour over the hot tea. Let it soak overnight.
Step 2
The next day, preheat your oven to 170°C (340°F). Grease and line a loaf tin.
Step 3
In a large mixing bowl, combine the self-raising flour, light brown sugar, and mixed spice.
Step 4
Add the soaked fruit and any remaining tea, along with the beaten egg. Mix well to combine.
Step 5
Pour the mixture into the prepared loaf tin and smooth the top.

Bake in the preheated oven for 90 minutes, or until a skewer inserted into the center comes out clean.
Step 7
Allow the barmbrack to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
Step 8
Slice and serve with butter, if desired.
