Ingredients

  • 480 milliliters chicken broth
  • 1 teaspoon cumin
  • 1 cup frozen peas and carrots
  • 2 cloves garlic
  • 2 cups long grain white rice
  • 2 tablespoons olive oil
  • 1 onion
  • 0.5 teaspoon pepper
  • 1 teaspoon salt
  • 225 grams tomato sauce

Directions

Step 1
Rinse the rice under cold water until the water runs clear.
Step 2
Set the Instant Pot to sauté mode and add olive oil.
Step 3
Add the chopped onion and garlic to the pot, sauté until soft and fragrant.

Stir in the rice and cook, stirring frequently, until the rice is lightly toasted.

Add the tomato sauce, chicken broth, cumin, salt, and pepper. Stir to combine.

Turn off the sauté mode, secure the lid, and set the Instant Pot to high pressure for 4 minutes.

Once the cooking time is up, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.

Carefully open the lid and stir in the frozen peas and carrots. Let the rice sit for a few minutes to heat the vegetables.
