Step 1
Rinse the lentils under cold water and drain.

In a slow cooker, add the olive oil, chopped onion, diced carrots, and diced celery.

Add the minced garlic, canned tomatoes, vegetable broth, salt, black pepper, dried oregano, and dried thyme.

Stir in the rinsed lentils and cover the slow cooker.

Cook on low for 6-8 hours or on high for 3-4 hours, until the lentils are tender.

About 10 minutes before serving, stir in the fresh spinach and lemon juice.
