  • 375 g all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 225 g butter
  • 4 eggs
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 120 ml milk
  • 0.5 tsp salt
  • 400 g sugar
  • 350 g sweet potatoes
  • 1 tsp vanilla extract

Directions

Step 1
Preheat your oven to 350°F (175°C). Grease and flour a bundt pan.
Step 2
In a large bowl, cream butter and sugar until light and fluffy.
Step 3
Add eggs one at a time, beating well after each addition.
Step 4
Stir in mashed sweet potatoes.
Step 5
In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Add the dry ingredients to the sweet potato mixture alternately with the milk, beginning and ending with the flour mixture.

Stir in vanilla extract.
Step 8
Pour batter into the prepared bundt pan.

Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
