  • 2 tablespoons butter
  • 4 chicken breasts
  • 250 ml chicken broth
  • 4 cloves garlic
  • 125 ml heavy cream
  • 60 ml lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons olive oil
  • 2 tablespoons parsley
  • 1 teaspoon salt

Directions

Step 1
Season the chicken breasts with salt and pepper.
Step 2
Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add the butter and melt over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Pour in the chicken broth and bring to a simmer. Let it reduce by half, about 5 minutes.

Stir in the heavy cream, lemon juice, and lemon zest. Cook until the sauce has thickened slightly, about 3-4 minutes.

Return the chicken breasts to the skillet and cook for another 2-3 minutes, until heated through and coated in the sauce.
