  • 1 tbsp fresh rosemary
  • 1 tbsp fresh thyme
  • 4 garlic cloves
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 kg top sirloin roast

Directions

Step 1
Preheat your oven to 220°C (425°F).

In a small bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and black pepper.

Rub the mixture all over the top sirloin roast.
Step 4
Place the roast on a rack in a roasting pan.
Step 5
Roast in the preheated oven for 15 minutes, then reduce the temperature to 180°C (350°F).

Continue roasting for about 1.5 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.

Remove the roast from the oven and let it rest for 15 minutes before slicing.
