Directions

Dissolve yeast in warm water and let sit for 5 minutes until bubbly.

In a large bowl, mix together the mashed potatoes, milk, sugar, shortening, eggs, and salt.

Add the yeast mixture to the bowl and mix well.

Gradually add the flour, one cup at a time, mixing well after each addition. The dough should be soft but not sticky.

Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.

Roll out the dough on a floured surface to about 1/2 inch thick.

Cut out doughnut shapes using a doughnut cutter or two round cutters of different sizes.

Heat oil in a deep fryer or large pot to 375°F (190°C).
