These roasted melting potatoes are crispy on the outside and incredibly tender on the inside. Perfect as a side dish for any meal, they are simple to prepare and absolutely delicious.
Directions
Step 1
Preheat your oven to 450°F (230°C).
Step 2
Peel the potatoes and cut them into 1-inch thick slices.
Step 3
In a large bowl, toss the potato slices with melted butter, thyme, salt, and pepper until evenly coated.
Step 4
Arrange the potatoes in a single layer on a baking sheet.
Step 5
Roast in the preheated oven for 15 minutes.
Step 6
Flip the potatoes and roast for another 15 minutes.
Step 7
Remove the baking sheet from the oven and pour the chicken broth and minced garlic over the potatoes.
Step 8
Return to the oven and roast for an additional 15 minutes, or until the potatoes are tender and the liquid is mostly absorbed.
Step 9
Serve the potatoes hot, garnished with additional thyme if desired.
