Ingredients

  • 1 tsp cumin
  • 5 dried ancho chiles
  • 5 dried guajillo chiles
  • 5 garlic cloves
  • 1 tsp oregano
  • 1000 g pork shoulder
  • 2 tsp salt
  • 4 tomatoes
  • 2 tbsp vegetable oil
  • 500 ml water
  • 1 white onion

Directions

Step 1
Toast the dried chiles in a dry skillet over medium heat until fragrant, about 2 minutes.
Step 2
Soak the toasted chiles in hot water for 20 minutes, then drain and set aside.
Step 3
In a blender, combine the soaked chiles, garlic, onion, tomatoes, cumin, oregano, and salt. Blend until smooth.
Step 4
In a large pot, heat the vegetable oil over medium heat. Add the pork and cook until browned on all sides.
Step 5
Pour the blended chile mixture over the pork. Add the water and bring to a boil.
Step 6
Reduce heat to low and simmer for 1.5 to 2 hours, until the pork is tender.
Step 7
Serve hot with rice or tortillas.
