Ingredients

  • 1 cauliflower
  • 1 tbsp celery seed
  • 8 cucumbers
  • 0.5 cup flour
  • 4 green peppers
  • 0.5 cup mustard powder
  • 12 onions
  • 1 cup salt
  • 3 cups sugar
  • 1 tbsp turmeric
  • 4 cups vinegar
  • 6 cups water

Directions

Step 1
Chop all vegetables into bite-sized pieces.
Step 2
Combine vegetables in a large bowl and sprinkle with salt. Cover with water and let sit overnight.

The next day, drain and rinse the vegetables thoroughly.
Step 4
In a large pot, combine vinegar, sugar, mustard powder, flour, turmeric, and celery seed. Mix well to avoid lumps.
Step 5
Add the vegetables to the pot and bring the mixture to a boil.
Step 6
Reduce heat and simmer for 10 minutes, until the sauce thickens and the vegetables are tender.
Step 7
Pack the pickles into sterilized jars, ensuring the vegetables are covered with the mustard sauce.
Step 8
Seal jars and store in a cool, dark place. Allow pickles to mature for at least a week before using.
