Directions
Step 1
Preheat your oven to 160°C (320°F).

In a large bowl, beat the cream cheese and mascarpone until smooth.

Add the sugar and continue to beat until well combined.
Step 4
Add the eggs, one at a time, beating well after each addition.

Stir in the vanilla extract.

Dip each ladyfinger into the cooled coffee and arrange them in the bottom of a greased springform pan.

Pour half of the cream cheese mixture over the ladyfingers.

Repeat the layers with the remaining ladyfingers and cream cheese mixture.

Bake in the preheated oven for 60 minutes, or until the center is set.

Turn off the oven and let the cheesecake cool in the oven with the door slightly open.

Refrigerate for at least 4 hours before serving.
