A rich and creamy cinnamon-flavored ice cream that's perfect for a unique and delicious dessert.
Directions
Step 1
In a medium saucepan, combine the heavy cream, whole milk, and ground cinnamon. Heat over medium heat until the mixture is hot but not boiling.
Step 2
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.
Step 3
Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to avoid cooking the eggs.
Step 4
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
Step 5
Remove from heat and stir in the vanilla extract.
Step 6
Pour the mixture through a fine-mesh sieve into a bowl to remove any lumps or cooked egg bits.
Step 7
Cover the bowl with plastic wrap and refrigerate until the mixture is completely chilled, at least 4 hours or overnight.
Step 8
Once chilled, pour the mixture into an ice cream maker and freeze according to the manufacturer's instructions.
Step 9
Transfer the ice cream to an airtight container and freeze for at least 2 hours before serving to allow it to firm up.
