Preheat your oven to 200°C (400°F).

In a large bowl, combine the flour and sugar. Add the chilled butter and mix until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

On a floured surface, roll out the dough to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim any excess.

In another bowl, combine the plums, sugar, cornstarch, lemon juice, and cinnamon. Toss until the plums are well coated.
